Begin by dicing the ham, chopping the onion, and bell pepper. Set aside.

Whisk the Eggs
In a large bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Add salt and black pepper to taste.

In a large skillet, melt the butter over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 3-4 minutes.

Scramble the Eggs
Cook the mixture, stirring occasionally, until the eggs are just set and fluffy, about 5-7 minutes.

Sprinkle the shredded Colby cheese over the scrambled eggs and stir until melted. Remove from heat.
