    In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, black pepper, salt, and liquid smoke. Mix well until all ingredients are fully blended.

    Marinate the Sausage

    Place the smoked sausage in a large resealable plastic bag or a shallow dish. Pour the marinade over the sausage, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for enhanced flavor.

Smoking

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C).

    Add Wood Chips

    After soaking, drain the wood chips and add them to the smoker box or directly onto the coals if using a charcoal smoker.

    Smoke the Sausage

    Place the marinated sausage on the smoker rack. Close the smoker and allow the sausage to smoke for 1.5 to 2 hours, or until the internal temperature reaches 160°F (71°C).

Serving
