Prepare the Cheese Platter
Arrange the cheddar and brie cheese on a serving platter. Add a handful of grapes and an assortment of crackers around the cheeses.

Prepare the Vegetables
Wash and cut the carrots, celery, and cucumbers into sticks and slices. Place them on a serving platter. Serve with ranch dressing in a small bowl for dipping.

Marinate and Assemble Skewers
In a bowl, combine olive oil, salt, and black pepper. Add cubed chicken, bell pepper, and red onion, and toss to coat. Skewer the mixture onto wooden skewers. Grill or bake until the chicken is cooked through.

In a bowl, combine diced tomatoes, chopped basil, minced garlic, olive oil, and salt. Mix well. Toast sliced baguette until golden, then top each slice with the tomato mixture.
