Method

Preparation of Grilled Salmon

  1. 1

    Marinate the Salmon

In a bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper. Place the salmon fillets in a resealable plastic bag or shallow dish and pour the marinade over the fillets. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and discard the marinade. Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. If desired, sprinkle with fresh dill just before serving.

Preparation of Seasonal Vegetables

  1. 4

    Prepare the Vegetables

Wash and slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

  2. 5

Toss with Olive Oil and Seasonings

In a large bowl, combine the sliced zucchini, bell peppers, and asparagus. Drizzle with olive oil, sprinkle with salt and black pepper, and toss until the vegetables are well coated.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.
