Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water, ensuring the bottom of the bowl does not touch the water. Stir until melted and smooth. Remove from heat and allow to cool slightly.

    Whisk the Eggs

    In a separate mixing bowl, whisk the eggs and granulated sugar together until the mixture becomes pale and fluffy. This should take about 3-5 minutes using an electric mixer.

    Combine Mixtures

    Gently fold the melted chocolate mixture into the egg mixture, being careful not to deflate the eggs. Add the vanilla extract and mix until fully incorporated.

    Chill the Mousse

    Pour the mousse mixture into individual serving cups or a large dish. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

    Prepare the Cream

    In a mixing bowl, pour the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form, approximately 3-5 minutes.

    Once the mousse is set, remove from the refrigerator. Top each serving with a generous dollop of whipped cream before serving.
