    Clean the Octopus

    Rinse the octopus under cold water and remove the beak and any innards. If necessary, you can ask your fishmonger to do this for you.

    Marinate the Octopus

    In a large bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the cleaned octopus and ensure it is well coated. Let it marinate for at least 1 hour in the refrigerator.

Cooking

    Prepare the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to become white-hot.

    Grill the Octopus

    Remove the octopus from the marinade and let any excess liquid drip off. Place the octopus on the grill and cook for about 3-4 minutes on each side, or until it is charred and tender.

    Serve

    Once cooked, remove the octopus from the grill and let it rest for a few minutes. Slice the octopus into bite-sized pieces, plate it, and garnish with lemon zest and capers.
