Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

Prepare the Buttermilk Marinade
In a bowl, pour the buttermilk over the calamari rings. Cover and refrigerate for at least 30 minutes.

Mix the Dry Ingredients
In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture, ensuring they are well-coated.

Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes, or until golden brown. Use a slotted spoon to remove the calamari and drain on paper towels.

Mix the Aioli Ingredients
In a small bowl, combine mayonnaise, minced garlic, sriracha sauce, lemon juice, salt, and pepper. Mix until well combined.

Serve the fried calamari hot with a side of spicy aioli for dipping.
