Method

Preparation of Beef

  1. 1

    Prepare the Beef

Finely chop the beef tenderloin or sirloin using a sharp knife. Aim for a uniform, small dice to ensure the best texture.

  2. 2

    Season the Beef

In a mixing bowl, combine the chopped beef with Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper. Mix gently to combine all the ingredients.

Assembly

  1. 3

    Plate the Tartare

Using a ring mold or a round cookie cutter, pack the seasoned beef mixture into a round shape on a plate.

  2. 4

    Add Toppings

Create a small indentation in the center of the packed beef and carefully place the quail egg on top. Sprinkle with capers, chopped parsley, and finely chopped shallots for garnish.

Serving

  1. 5

    Serve Immediately

Serve the beef tartare immediately with toast points or crackers on the side.
