    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.

    In a medium pot, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes or until the rice is cooked and the water is absorbed.

    Remove the pot from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.

    Gently fold this mixture into the cooked rice, being careful not to mash the rice grains. Allow the rice to cool to room temperature.

    Prepare the Spam

    Open the can of Spam and slice it into 8 equal pieces.

    In a skillet over medium-high heat, add the sesame oil.

    Fry the Spam slices for about 2-3 minutes on each side until they are golden brown and crispy.

    Assemble the Musubi

    Lay a sheet of plastic wrap on a flat surface and place a piece of nori on top, shiny side down.

    Wet your hands to prevent sticking, then take a portion of sushi rice (about 1/2 cup) and shape it into a rectangle, pressing it down firmly.

    Place a slice of fried Spam on top of the rice.

    Sprinkle a little furikake over the Spam.

    Fold the nori over the Spam and rice, using the plastic wrap to help shape and press it into a tight rectangle.

    Wrap the plastic wrap around the musubi tightly and allow it to sit for about 10 minutes to set.
