Dough Preparation

    Mix the Dough

    In a large mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Gradually add 3 tbs of water while mixing until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

    Prepare Filling Mix

    In a mixing bowl, combine 1 lb of ground pork, 1 tbs of minced ginger, 2 minced garlic cloves, 2 tbs of soy sauce, 1 tbs of sesame oil, 1 tsp of salt, 1 tsp of sugar, and 2 tbs of chopped green onions.

    Incorporate Broth

    Gradually add 1 cup of chicken broth (or gelatin) to the pork mixture, stirring until well combined. This will create a soupy filling.

Assembly

    Roll the Dough

    After the dough has rested, roll it out on a floured surface until it's about 1/8 inch thick. Cut out circles (approximately 3 inches in diameter).

    Fill the Dumplings

    Place about 1 tablespoon of the filling in the center of each dough circle. Carefully fold the edges of the dough over the filling, pleating as you go to create a sealed dumpling.

Cooking

    Prepare the Steamer

    Set up a steamer pot filled with water and bring it to a boil. Line the steamer basket with parchment paper to prevent sticking.

    Steam the Dumplings

    Place the dumplings in the steamer basket, leaving space between them. Cover and steam for about 10-12 minutes.

    Serve

    Remove the dumplings from the steamer and serve hot with dipping sauce (soy sauce and vinegar mix).
