Prepare the Lemon Confit

    Make Lemon Confit

    In a small saucepan, combine the sliced lemons, sugar, and water. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves. Reduce the heat to low and let simmer for about 30 minutes until the lemons are tender and the syrup thickens. Remove from heat and let cool.

Cook the Prawns

    Sauté Prawns

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the prawns, lemon juice, salt, and pepper. Cook for 3-5 minutes until the prawns are pink and cooked through. Set aside.

Cook the Salmon

    Prepare and Cook Salmon

    Preheat the oven to 400°F (200°C). Rub the salmon fillets with olive oil, salt, pepper, and fresh dill. Place them on a baking sheet lined with parchment paper. Bake for 12-15 minutes until the salmon is cooked through and flakes easily with a fork.

Serve

    Plate the Dish

    On each plate, place a salmon fillet, top with sautéed prawns, and drizzle with lemon confit syrup. Garnish with additional fresh dill if desired. Serve immediately.
