    Searing the Shanks

    In a large pot, heat the olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then sear them in the pot until browned on all sides. Remove shanks and set aside.

    Cooking the Aromatics

    In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.

    Making the Sauce

    Add the crushed tomatoes, red wine, cinnamon stick, and bay leaf to the pot. Stir well and bring to a simmer.

    Braising the Shanks

    Return the lamb shanks to the pot, making sure they are submerged in the sauce. Cover the pot and reduce heat to low. Let simmer for about 2 hours, or until the meat is tender and falling off the bone.

    Cooking the Rice

    In a saucepan, heat the vegetable broth and keep it warm. In a separate pan, melt the butter and sauté the chopped onion until soft. Add the arborio rice and stir for 1-2 minutes.

    Gradually add the warm vegetable broth, one ladle at a time, stirring continuously until the rice absorbs the liquid.

    Finishing Touches

    When the rice is al dente, stir in the fresh peas, grated parmesan cheese, salt, black pepper, and chopped parsley. Cook for an additional 2-3 minutes.
