    Prepare the Potatoes

    Peel and chop the potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Cook the Steak

    Season the ribeye steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let it rest.

    Make the Sauce

    In the same skillet used for the steak, add the chiant and aged balsamic vinegar. Bring to a simmer and reduce for about 3-5 minutes.

Potato Puree

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.

Plating

    Serve

    Plate the potato puree, place the sliced ribeye on top, and drizzle with the chiant and balsamic sauce.
