Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 200°C (400°F). Season the chicken breasts with salt and pepper on both sides. Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken breasts for 4-5 minutes on each side until golden brown.

  2. 2

    Add Prosciutto and Cheese

Once the chicken is seared, layer the prosciutto over each breast, followed by slices of fontina cheese. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and the cheese is melted.

Gnocchi Preparation

  1. 3

    Cook the Gnocchi

While the chicken is baking, bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the top. Drain and set aside.

  2. 4

    Sauté the Gnocchi

In a large skillet, melt the butter over medium heat. Add the cooked gnocchi and sage leaves. Sauté for about 5-7 minutes until the gnocchi are golden brown and crispy.

Serving

  1. 5

    Plate the Dish

To serve, place a portion of the crispy gnocchi on each plate, top with a chicken breast, and sprinkle with grated Parmesan cheese. Enjoy your delicious free range chicken breast with prosciutto, fontina, and gnocchi!
