2023 Pinot Grigio Recipe
Luna Rossa Winery is dedicated to producing fine wines exclusively from grapes grown in our vineyards in Deming, New Mexico. Luna Rossa Pinot Grigio is a medium bodied wine. Delicately fragrant and mild floral with a hint of apple-citrus flavors. It pairs well with pasta, chicken and fish.

Method
Wine Making Process
- 1
Harvesting the Grapes
Select and harvest ripe Pinot Grigio grapes from the vineyard. Ensure the grapes are free from rot and excess moisture.
- 2
Crushing and Pressing
Crush the grapes gently to release the juice. Press the crushed grapes to separate the juice from the skins and seeds.
- 3
Fermentation
Transfer the juice into fermentation tanks. Add yeast to the juice and allow it to ferment at a controlled temperature for 14-21 days.
- 4
Racking
Once fermentation is complete, rack the wine to separate it from the sediment at the bottom of the tank.
- 5
Aging
Age the wine in stainless steel or neutral oak barrels for 3-6 months to develop flavors.
- 6
Bottling
After aging, filter and bottle the wine. Add sulfites to preserve freshness. Seal the bottles and label them.
