2022 Rosé Recipe

Time3h
Serves6

Luna Rossa Winery is dedicated to producing fine wines exclusively from grapes grown in our vineyards in Deming, New Mexico. Luna Rossa Rosé is a dry and elegant light pink wine, showing the quality of early season grapes. Pairs well with shellfish or just by itself as an aperitif. We recommend it served slightly chilled.

Method

Winemaking Process

  1. 1

    Harvesting the Grapes

Select and harvest ripe Grenache and Syrah grapes from the vineyard, ensuring the quality and ripeness for the desired flavor profile.

  2. 2

    Crushing and Pressing

Crush the grapes gently to release the juice and separate the skins from the must. Press the grapes to extract the juice, aiming for light pink color.

  3. 3

    Fermentation

Transfer the juice to fermentation tanks. Add yeast and malolactic culture to start the fermentation process. Maintain a temperature of 15-20°C for optimal results.

  4. 4

    Aging

After fermentation, allow the wine to age in stainless steel tanks for at least 3 months to develop its flavors and aromas.

  5. 5

    Sulfite Addition

Add sulfites to stabilize the wine and protect it from oxidation and spoilage.

  6. 6

    Bottling

Filter the wine to remove any sediment and transfer it into clean bottles. Ensure the bottles are sealed properly to maintain quality.

  7. 7

    Chilling and Serving

Refrigerate the wine slightly before serving. It is best enjoyed chilled, either on its own or paired with shellfish.
