Luna Rossa Winery is dedicated to producing fine wines exclusively from grapes grown in our vineyards in Deming, New Mexico. Gewurztraminer is produced in a semi-sweet style. It is a fine accompaniment to hot-spicy foods or with fresh fruit and cheesecake for dessert. It should be served slightly chilled to bring the wine into balance but not so cold as to mask the delicate aromatics.

Wine Making Process

    Harvesting and Crushing

    Harvest the Gewurztraminer grapes when they reach optimal ripeness. Crush the grapes gently to release the juice.

    Fermentation

    Transfer the crushed grapes and juice into a fermentation vessel. Add the yeast and sugar to the mixture. Allow fermentation to occur at a controlled temperature of around 20-22°C (68-72°F) for 2-3 weeks.

    Racking

    Once fermentation is complete, rack the wine off the sediment into a clean vessel, leaving the solids behind. This helps clarify the wine.

    Aging

    Age the wine in stainless steel or neutral oak barrels for approximately 3-6 months to develop the flavors and aromas.

    Bottling

    After aging, filter the wine if desired and add sulfites if using. Bottle the wine and cork it. Allow it to rest for an additional month before enjoying.

    Serving

    Serve the Gewurztraminer slightly chilled, ideally at a temperature of 10-12°C (50-54°F). Pair it with spicy foods or desserts like cheesecake.
