Luna Rossa Riesling is made dryer, fresh and fruity Alsatian style, containing 0.8% residual sugar. This wine has hints of orange blossom in the aroma, with full flavor showing a balance of acidity and slight sweetness. It can be enjoyed with oysters, fish, and all seafood, and cheese plates.

Winemaking Process

Harvesting the Grapes
Harvest ripe Riesling grapes from the vineyard in Deming, New Mexico.

Crushing and Pressing
Crush the grapes and press them to extract the juice. Ensure that the juice is kept at a cool temperature to preserve freshness.

Fermentation
Add the yeast to the grape juice and allow it to ferment in a controlled temperature environment for about 2-3 weeks.

Adding Sulfur Dioxide
After fermentation, add sulfur dioxide to stabilize the wine and prevent unwanted bacteria.

Maturation
Allow the wine to mature in stainless steel tanks for approximately 3-6 months to develop the flavors.

Bottling
Once matured, filter the wine to remove any sediment, and bottle it under sterile conditions.

Aging
Let the bottled wine age for at least 3 months before distribution, ensuring the flavors have melded.
