2023 Chenin Blanc Recipe
Luna Rossa Winery is dedicated to producing fine wines exclusively from grapes grown in our vineyards in Deming, New Mexico. This variety has adapted very well to our hot climate. Luna Rossa Chenin Blanc has a very fruity aroma like melon with a touch of residual sugar. Serve with hot spicy foods of the southwest or oriental foods. We recommend you serve it chilled.

Ingredients for Chenin Blanc Wine
Method
Winemaking Process
- 1
Harvesting and Crushing
Harvest the ripe Chenin Blanc grapes and crush them to release the juice. Ensure that the grapes are clean and free from any mold or rot.
- 2
Pressing
Transfer the crushed grapes to a wine press and extract the juice. Collect the juice in a clean fermentation vessel.
- 3
Fermentation
Add water and wine yeast to the grape juice. Cover the fermentation vessel with an airlock and allow it to ferment at a controlled temperature (around 18-20°C) for about 2-4 weeks.
- 4
Racking
Once fermentation is complete, siphon the wine off the sediment into a clean vessel. This process is called racking.
- 5
Aging
Add sulfur dioxide to the wine to preserve it. Allow the wine to age for a few months in a cool, dark place. Taste periodically to achieve the desired flavor profile.
