Wine Production Process

Harvesting
Harvest Merlot and Cabernet Sauvignon grapes at optimal ripeness, ideally in late summer to early fall.

Crushing and Destemming
Crush and destem the harvested grapes to release the juice and separate the skins.

Fermentation
Transfer the crushed grapes into fermentation tanks. Allow the must to ferment for 7-14 days at a controlled temperature of 70-85°F (21-29°C).

Pressing
After fermentation, press the mixture to separate the liquid wine from the solid grape skins.

Aging
Transfer the wine into oak barrels for aging. Age for at least 12 months to develop smooth and rich flavors.

Bottling
Once aged, filter and bottle the wine. Allow it to rest in the bottle for an additional few months before release.
