1. Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
2. Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion becomes translucent.
3. Add Remaining Vegetables
Stir in the chopped bell pepper, zucchini, and cherry tomatoes. Season with salt and black pepper. Cook for about 5-7 minutes until the vegetables are tender.
4. Combine Pasta and Vegetables
Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together to combine, and cook for an additional 2-3 minutes.
5. Finish with Basil and Cheese
Remove from heat and stir in fresh basil and grated Parmesan cheese. Adjust seasoning if necessary.
6. Serve
Serve immediately, garnished with extra basil and cheese if desired.
