Method

Prepare the Tomato Confit

    Roast the Tomatoes

    Preheat the oven to 300°F (150°C). In a baking dish, combine cherry tomatoes, garlic cloves, thyme, and olive oil. Season with salt. Roast for about 1 hour or until the tomatoes are soft and bursting.

Make the Chimichurri

    Mix the Ingredients

    In a bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, and olive oil. Add red pepper flakes and salt to taste. Mix well and let it sit for at least 30 minutes to allow the flavors to meld.

Cook the Broccoli

    Sauté the Broccoli

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add broccoli florets, season with salt and pepper, and cook for about 5-7 minutes until tender-crisp.

Cook the Wagyu Beef

    Sear the Steak

    Season the wagyu beef with salt and black pepper. Heat olive oil in a skillet over high heat. Sear the steak for about 3-4 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Plate the Dish

    Serve

    Plate the sliced wagyu beef zabuton steak alongside the sautéed broccoli and roasted tomato confit. Drizzle with chimichurri sauce before serving.
