    Prepare the Chicken Confit

    Season the chicken thighs with salt and pepper. In a large oven-safe pot, combine the chicken with olive oil, thyme, and garlic. Cover and cook in a 300°F (150°C) oven for about 2-3 hours until the chicken is tender and falling off the bone.

    Make the Ricotta Gnocchi

    In a bowl, mix ricotta cheese, flour, and egg until combined. Form into a dough and roll into small logs. Cut into bite-sized pieces and set aside.

    Prepare the Fricassee

    In a skillet, melt butter over medium heat. Add the chanterelle mushrooms and sauté until golden. Add the shredded cabbage and chicken broth, cooking until the cabbage is tender.

    Cook the Gnocchi

    Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the top, about 2-3 minutes. Remove with a slotted spoon and add them to the fricassee.

    Assemble the Dish

    Remove the chicken from the confit and shred it. In a bowl, combine the shredded chicken with the fricassee and gnocchi. Serve warm.
