Making Vanilla Bean Ice Cream

Prepare the Vanilla
Split the vanilla beans lengthwise and scrape out the seeds. Set aside the seeds and the pods.

Heat Cream and Milk
In a saucepan, combine the heavy cream, milk, half of the sugar, vanilla bean seeds, and the pods. Heat over medium heat until it begins to steam, but do not let it boil.

Thicken the Mixture
Cook over low heat, stirring constantly with a wooden spoon, until the mixture thickens enough to coat the back of the spoon (about 5-7 minutes).

Strain and Cool
Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl to remove the vanilla pods. Stir in a pinch of salt.

Chill
Cover the bowl with plastic wrap and refrigerate until completely chilled, at least 4 hours or overnight.

Churn the Ice Cream
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
