    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Pancetta

    In a large skillet over medium heat, cook the pancetta until crispy. This should take about 5-7 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine, allowing the heat of the pasta to warm the pancetta.

    Create the Sauce

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing rapidly to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper.
