    Prepare the Potatoes

    Scrub the potatoes thoroughly under running water. Pat them dry with a kitchen towel.

    Make the Black Garlic Paste

    In a small bowl, mash the black garlic cloves to a paste using a fork.

    Season the Potatoes

    In a large bowl, mix the olive oil, black garlic paste, fresh rosemary, fresh thyme, salt, and black pepper. Add the potatoes and toss until they are evenly coated.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). You can use wood chips of your choice; hickory and apple wood work great with potatoes.

    Smoke the Potatoes

    Place the seasoned potatoes in the smoker and smoke for about 2 hours, or until they are tender and infused with smoky flavor.

    Serve

    Remove the potatoes from the smoker, let them cool for a few minutes, then serve hot as a side dish or snack.
