Lamb Noisette

    Sear the Lamb

    Heat olive oil in a skillet over medium-high heat. Season lamb with salt and pepper, then sear for 4-5 minutes on each side until browned and cooked to desired doneness. Remove from pan and let rest.

Couscous Polenta

    Prepare Couscous

    Bring water to a boil in a pot. Stir in couscous and remove from heat. Cover for 5 minutes, then fluff with a fork. Stir in butter and Parmesan cheese.

Herb Salad

    Make the Herb Salad

    In a bowl, combine mixed herbs, lemon juice, olive oil, salt, and pepper. Toss to combine.

Toum

    Prepare Toum

    In a food processor, blend garlic and salt until finely minced. Slowly drizzle in vegetable oil while processing until creamy. Add lemon juice and blend until combined.

Lamb Bacon

    Prepare Lamb Bacon

    Rub lamb belly with brown sugar and salt. Let sit for a few hours or overnight. Cook in a skillet until crispy.

Pickled Cauliflower

    Pickle the Cauliflower

    In a saucepan, combine vinegar, water, sugar, and salt. Bring to a boil. Pour over cauliflower florets in a jar and let sit for at least an hour before serving.
