Veal Parmesan Recipe

Veal Cutlets

Method

Prepare Veal Cutlets

    Pound the Veal

    Place veal cutlets between two pieces of plastic wrap and pound them to about 1/2 inch thick using a meat mallet.

    Dredge the Cutlets

    Set up three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with bread crumbs. Dredge each cutlet first in flour, then dip in eggs, and finally coat with bread crumbs.

    Fry the Cutlets

    In a large skillet, heat olive oil over medium-high heat. Fry the breaded cutlets for about 3-4 minutes on each side until they are golden brown. Remove from the skillet and drain on paper towels.

Make Marinara Sauce

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Simmer the Sauce

    Add crushed tomatoes, oregano, basil, salt, pepper, and sugar to the saucepan. Bring to a simmer and cook for about 20 minutes, stirring occasionally.

Assemble and Bake

    Prepare for Baking

    Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce on the bottom.

    Layer the Cutlets

    Place the fried veal cutlets on top of the sauce. Spoon additional marinara sauce over each cutlet, then sprinkle with mozzarella and parmesan cheese.

    Bake

    Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.

Cook Pasta

    Boil Pasta

    In a large pot, bring water to a boil and add salt. Add pasta and cook according to package instructions until al dente. Drain and toss with a little olive oil to prevent sticking.

Serve

    Plate the Dish

    Serve the veal parmesan hot over a bed of pasta marinara. Garnish with extra parmesan cheese and fresh basil if desired.
