Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine flour and salt. Create a well in the center and add the activated yeast mixture and olive oil.

Knead Dough
Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Filling Preparation

Caramelize Onions
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and cook, stirring occasionally, for about 15-20 minutes until golden brown.

Cook Spinach
Add fresh spinach to the skillet with the onions and cook until wilted, about 3-5 minutes. Season with salt and pepper. Remove from heat and let cool.

Combine Filling Ingredients
In a mixing bowl, combine the cooled spinach and onion mixture, ricotta cheese, and mozzarella cheese. Mix well.
Marinara Sauce Preparation

Cook Marinara Sauce
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Simmer Sauce
Add crushed tomatoes, oregano, salt, and black pepper to the saucepan. Bring to a simmer and cook for about 15-20 minutes. Stir in fresh basil before serving.
Calzone Assembly

Preheat Oven
Preheat your oven to 475°F (245°C) and prepare a baking sheet lined with parchment paper.

Roll Out Dough
Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 8 inches in diameter.

Fill Calzones
Place about 1/2 cup of the filling on one half of each dough circle. Fold the other half over and seal the edges by crimping with a fork.

Bake Calzones
Place the calzones on the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until golden brown.

Serve
Allow the calzones to cool for a few minutes before serving with marinara sauce on the side.
