Pasta Preparation

Cook the Spaghetti
In a large pot, bring water to a boil. Add salt to the boiling water. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water. Drain the spaghetti and set aside.
Sauce Preparation

Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare Egg Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combine and Serve

Combine Pasta and Sauce
Add the hot spaghetti to the skillet with the pancetta. Quickly pour the egg and cheese mixture over the pasta, tossing vigorously to combine. The heat from the pasta will cook the eggs gently, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve immediately, garnished with chopped parsley and extra Parmesan cheese if desired.
