Method

Preparing the Pasta

  1. 1

    Cook the Linguine

In a large pot of boiling salted water, add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Cooking the Shrimp and Sauce

  1. 2

    Sauté the Shrimp

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque.

  2. 3

    Add the Wine

Pour in the dry white wine and bring to a simmer. Allow it to cook for about 2 minutes to reduce slightly.

  3. 4

Mix in the Tomatoes and Seasoning

Stir in the diced plum tomatoes, red pepper flakes, salt, and black pepper. Let the mixture simmer for an additional 3-4 minutes until the tomatoes soften.

  4. 5

    Combine with Pasta

Add the cooked linguine to the skillet with the shrimp and sauce. Toss everything together, adding reserved pasta water as needed to create a sauce that coats the pasta.

  5. 6

    Finish with Cheese and Parsley

Remove from heat and stir in the grated Romano cheese and chopped parsley. Mix until the cheese is melted and everything is well combined.
