Cook the Ravioli
Bring a large pot of salted water to a boil. Add the cheese ravioli and cook according to package instructions, usually about 4-5 minutes, until they float to the top. Drain and set aside.

Prepare the Meat Sauce
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion, carrot, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.

Cook the Meat
Add the ground beef and ground pork to the skillet. Cook until browned, breaking it up with a spatula, about 7-10 minutes.

Add Tomato and Seasoning
Stir in the tomato paste, canned tomatoes, and red wine. Add the dried oregano, salt, and black pepper. Bring the sauce to a simmer and cook for about 20 minutes, stirring occasionally.

Combine and Serve
Once the meat sauce is ready, gently fold the cooked ravioli into the sauce, ensuring they are well-coated. Serve the ravioli topped with shredded sharp Italian cheese and slices of fior latte mozzarella. Optionally, place under the broiler for 2-3 minutes to melt the cheese before serving.
