Method

Dough Preparation

    Activate Yeast

    In a bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large bowl, mix the flour and salt. Create a well in the center and add the yeast mixture and olive oil.

    Knead Dough

    Mix until combined and knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and allow it to rise in a warm area for about 1 hour, or until doubled in size.

Filling Preparation

    Prepare Filling

    In a bowl, combine the shredded chicken, sliced prosciutto, chopped basil, grated Romano, shredded mozzarella, and shredded Asiago cheese. Mix until well combined.

Marinara Sauce Preparation

    Cook Marinara Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Combine Ingredients

    Add crushed tomatoes, salt, dried oregano, and red pepper flakes. Simmer for about 15-20 minutes, stirring occasionally. Stir in fresh basil before serving.

Calzone Assembly and Baking

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Roll Out Dough

    Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle on a floured surface.

    Fill Calzones

    Place a generous scoop of the filling on one half of each dough circle. Fold the other half over and seal the edges by crimping with a fork.

    Bake Calzones

    Place the calzones on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.

    Serve

    Remove from the oven and let cool slightly. Serve with warm marinara sauce on the side.
