Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Sauté the Aromatics
In the same pot, add minced garlic and sauté for about 1 minute until fragrant. Add the diced tomatoes and cook for another 3-4 minutes until softened.

Combine Ingredients
Add the cleaned mussels to the pot with the sautéed tomatoes and garlic. Pour in the white wine and stir gently.

Simmer
Cover the pot and let the mussels cook for about 5-7 minutes or until they have opened. Discard any mussels that remain closed.

Add Gorgonzola and Bacon
Once the mussels are cooked, sprinkle the crumbled Gorgonzola cheese and the chopped bacon over the top. Stir gently to combine and allow the cheese to melt slightly.

Garnish and Serve
Remove the pot from heat. Garnish with fresh parsley, salt, and black pepper to taste. Serve immediately in bowls with crusty bread on the side for dipping.
