For the Mozzarella Triangoli

Prepare the Mozzarella
Cut the fresh mozzarella into quarter moon shapes, about 1 cm thick.

Bread the Mozzarella
Coat each piece of mozzarella first in flour, then dip it in the beaten eggs, and finally coat it thoroughly with breadcrumbs. Repeat until all pieces are breaded.

Fry the Triangoli
In a large frying pan, heat the vegetable oil over medium heat. Once hot, carefully place the breaded mozzarella in the oil, frying in batches if necessary. Fry for 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
For the Homemade Marinara Sauce

Add Tomatoes and Spices
Add the canned crushed tomatoes, dried oregano, dried basil, salt, sugar, and black pepper. Stir to combine.

Simmer the Sauce
Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally, until it thickens slightly.
