Arancini Bites

Prepare the Risotto
Cook the risotto according to package instructions. Allow it to cool completely.

Form the Bites
Once cooled, take a tablespoon of risotto, place a cube of mozzarella in the center, and form a ball around it.

Coat the Bites
Roll the rice balls in flour, then dip in beaten eggs, and finally coat with breadcrumbs.

Fry the Bites
In a deep pot, heat vegetable oil to 350°F (175°C). Fry the arancini in batches until golden brown, about 4-5 minutes. Drain on paper towels.

Roll the Dough
On a floured surface, roll out the pasta dough to a thin sheet.

Fill the Triangoli
Cut the dough into squares, place a small amount of mozzarella and parmesan in the center of each square.

Seal the Triangoli
Fold each square into a triangle and seal the edges with an egg wash.

Cook the Triangoli
Boil a large pot of salted water. Cook the triangoli for 3-4 minutes until they float. Drain and set aside.

Mix the Ingredients
In a large bowl, combine ground beef, breadcrumbs, egg, parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

Form the Meatballs
Shape the mixture into meatballs, about 1 inch in diameter.

Cook the Meatballs
Preheat the oven to 400°F (200°C). Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through.

In separate bowls, place house marinara sauce, buffalo sauce, and blue cheese dressing for serving.
