Preparation of Gelato Base

    Heat Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the hot milk and cream mixture into the egg yolk mixture while whisking continuously to temper the eggs. Once combined, return the mixture to the saucepan.

    Thicken the Base

    Cook the mixture over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-10 minutes). Do not let it boil.

    Add Vanilla Extract

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Freezing and Flavoring

    Chill the Mixture

    Cover the gelato base and refrigerate for at least 4 hours or overnight to chill completely.

    For chocolate gelato, whisk in cocoa powder into the chilled base. For strawberry gelato, blend fresh strawberries and strain to remove seeds, then mix into the base. For pistachio, fold in chopped pistachios.

    Pour the flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches soft-serve consistency.
