Method

Prepare the Garlic Mixture

    Roast the Garlic

    Preheat the wood oven to approximately 400°F (200°C). Cut the tops off the garlic cloves to expose the insides. Drizzle with olive oil and wrap in aluminum foil. Place in the oven for about 25-30 minutes until soft and caramelized.

    Make the Garlic Spread

    Once roasted, squeeze the garlic cloves out of their skins into a mixing bowl. Add olive oil, salt, black pepper, dried oregano, dried basil, and grated Romano cheese. Mash together until well combined.

Prepare the Ciabatta

    Slice the Bread

    Cut the ciabatta loaf in half lengthwise to create two long pieces. You can also slice it into smaller pieces if preferred.

    Spread the Garlic Mixture

    Spread the garlic mixture evenly over the cut sides of the ciabatta bread.

Bake the Garlic Bread

    Bake in Wood Oven

    Place the ciabatta bread halves in the wood oven directly on the oven floor or on a baking tray. Bake for about 10-15 minutes, or until the edges are crispy and the cheese is melted and bubbly.

Prepare Marinara Sauce

    Cook the Marinara

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute. Then add the canned crushed tomatoes, dried oregano, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.

    Finish the Sauce

    Just before serving, stir in the fresh basil and adjust seasoning if necessary.

Serve

    Plate and Serve

    Remove the garlic bread from the oven and let it cool slightly. Cut into pieces and serve warm with the marinara sauce on the side for dipping.
