Cake Preparation

    Preheat the oven

    Preheat your oven to 425°F (220°C).

    Prepare ramekins

    Grease four 6-ounce ramekins with butter and dust with flour. Tap out the excess flour.

    Melt chocolate and butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.

    Mix sugar and eggs

    In a separate bowl, whisk together granulated sugar, large eggs, and egg yolks until well combined and slightly thickened.

    Combine mixtures

    Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously. Add vanilla extract and mix until fully combined.

    Add dry ingredients

    Sift the all-purpose flour and salt into the chocolate mixture. Gently fold until just combined, being careful not to overmix.

    Fill ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

    Cool slightly

    Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.

    Run a knife around the edges of the cakes to loosen, then invert onto serving plates. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
