In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.

In a large mixing bowl, combine all-purpose flour and salt. Add the frothy yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm area for about 1 hour or until doubled in size.

Prepare Filling
In a mixing bowl, combine shredded chicken, buffalo sauce, smoked mozzarella cheese, and chopped scallions. Mix well until combined.
Assembly and Baking

Preheat Oven
Preheat your oven to 450°F (230°C).

Roll Out Dough
Once the dough has risen, punch it down and divide it into two equal parts. Roll each part into a 10-inch circle on a floured surface.

Fill Calzones
Spoon the chicken filling onto one half of each dough circle, leaving a border around the edge. Drizzle blue cheese dressing over the filling.

Seal Calzones
Fold the other half of the dough over the filling and press the edges to seal. Use a fork to crimp the edges.

Bake Calzones
Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.

Remove from the oven and let cool for a few minutes before slicing. Serve warm with extra blue cheese dressing on the side.
