Make the Dough
In a large bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until foamy. Add olive oil, salt, and flour gradually, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape the Flatbread
Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a flat oval shape about 1/4 inch thick.

Add Toppings
Place the flatbreads on a parchment-lined baking sheet. Top each with caramelized onions and crumble sweet Italian Gorgonzola cheese over the top.

Bake
Bake in the preheated oven for 10-12 minutes until the flatbreads are golden brown and the cheese is melted. Remove from the oven and let cool slightly before serving.
