Prepare the Pork

Preheat the oven to 300°F (150°C). In a small bowl, combine salt, black pepper, minced garlic, olive oil, rosemary, and thyme. Rub this mixture all over the pork shoulder.

Roast the Pork

Place the seasoned pork shoulder in a roasting pan and cover with foil. Roast in the preheated oven for about 3 hours, or until the internal temperature reaches 190°F (88°C). Remove the foil for the last 30 minutes to allow the skin to crisp up.

Prepare the Broccoli Rabe

While the pork is roasting, bring a large pot of salted water to a boil. Add the broccoli rabe and blanch for about 2 minutes, then drain and set aside.

Sauté the Broccoli Rabe

In a large skillet, heat olive oil over medium heat. Add sliced garlic and red pepper flakes, sauté for about 1 minute. Add the blanched broccoli rabe and sauté for an additional 4-5 minutes. Season with salt to taste.

Serve

Once the pork is done, let it rest for 10 minutes before slicing. Serve slices of roast pork topped with sautéed broccoli rabe and slices of sharp provolone cheese.
