Prepare the Dough

In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Using a fork, gradually mix the flour into the eggs until a rough dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Make the Ricotta Filling

In a medium bowl, mix together the ricotta cheese, grated Parmesan, egg yolk, nutmeg, salt, and black pepper until well combined.

Roll Out the Dough

After the dough has rested, divide it into four pieces. Roll out each piece on a floured surface or using a pasta machine until very thin (about 1/16 inch). Cut into squares of about 2 inches.

Fill the Tortellini

Place a small amount of the ricotta filling (about 1 tsp) in the center of each square. Fold the square over to form a triangle, pressing out any air. Bring the two corners of the triangle together to form a ring and pinch to seal.

Cook the Tortellini

Bring a large pot of salted water to a boil. Add the tortellini and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and drain.

Prepare the Sauce

For the panna cream sauce, melt butter in a saucepan over medium heat. Add minced garlic and sauté for 1 minute. Pour in the heavy cream and simmer for 5 minutes. For marinara, heat marinara sauce in a separate pot.

Serve

Toss the cooked tortellini with the sauce of your choice (panna cream or marinara) and sprinkle with fresh basil. Serve immediately.
