Prepare the Risotto
Cook the risotto according to your recipe or package instructions. Allow it to cool completely.

Mix Ingredients
Once the risotto is cool, stir in the chopped parsley, basil, and cubed mozzarella cheese until well combined.

Form Balls
With damp hands, take a portion of the risotto mixture and form it into a ball, about the size of a golf ball. Repeat until all mixture is used.

Coat the Balls
Dredge each rice ball in flour, dip it in the beaten eggs, and then roll in breadcrumbs until fully coated.

Fry the Arancini
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the rice balls in batches until golden brown, about 4-5 minutes per batch. Drain on paper towels.

Serve
Serve the arancini hot with marinara sauce on the side for dipping.
