Prepare the Seitan
Cut the seitan into bite-sized pieces and set aside.
Sauté the Garlic
In a large skillet, heat the extra virgin olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add Seitan
Add the seitan pieces to the skillet and cook for about 5-7 minutes, stirring occasionally until they are golden brown.
Deglaze with Madeira Wine
Pour in the Madeira wine and cook for an additional 2-3 minutes, allowing the alcohol to evaporate and the flavors to meld.
Add Cream
Stir in the heavy cream and season with salt and black pepper. Cook for another 2 minutes until everything is well combined and heated through.
Serve
Serve hot with the vegetable of the day on the side.
