    Prepare the Vegetables

    Wash and chop the bell peppers, onion, and tomato. Rinse the spinach and set aside.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Add salt and black pepper to taste.

    Sauté the Vegetables

    In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and bell peppers, and sauté for about 3-4 minutes until they start to soften.

    Add Spinach

    Stir in the spinach and cook for an additional 1-2 minutes, until the spinach wilts.

    Pour in the Eggs

    Pour the whisked eggs evenly over the sautéed vegetables in the skillet. Tilt the skillet to distribute the eggs evenly.

    Cook the Omelette

    Let the omelette cook undisturbed for about 4-5 minutes on medium-low heat. Check for doneness; the edges should be set while the center is still slightly runny.

    Add Cheese (Optional)

    If using cheese, sprinkle it over half of the omelette. Allow it to melt slightly.

    Fold and Serve

    Using a spatula, gently fold the omelette in half and slide it onto a plate. Serve immediately with sliced tomato on the side.
