    Prepare the Ingredients

    Gather all your ingredients. Make sure the cochinita pibil is properly cooked and shredded, the onions are caramelized, and the tomatoes are diced.

    Beat the Eggs

    In a mixing bowl, crack the 4 large eggs. Add 1 tsp of salt and black pepper to taste. Whisk the eggs until well combined and slightly frothy.

    Heat the Pan

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat until hot but not smoking.

    Cook the Omelette

    Pour the beaten eggs into the skillet. Swirl the pan to ensure the eggs cover the bottom evenly. Let them cook undisturbed for about 2-3 minutes or until the edges start to set.

    Add Fillings

    Evenly distribute the shredded cochinita pibil, caramelized onions, diced tomatoes, and shredded cheddar jack cheese over one half of the omelette.

    Once the eggs are set but slightly runny on top, carefully fold the other half of the omelette over the fillings using a spatula. Let it cook for another minute to allow the cheese to melt.
