Prepare the Spinach
In a large pot, bring water to a boil. Add a pinch of salt. Add the fresh spinach and blanch for about 2 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop cooking. Once cooled, drain again and squeeze excess water out. Chop coarsely and set aside.

Sauté Garlic
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

Add Cream and Seasoning
Pour in the heavy cream and stir to combine. Add the grated Parmesan cheese, nutmeg, salt, and black pepper, stirring until the cheese is melted and the mixture is smooth. Cook for an additional 2-3 minutes, allowing the mixture to thicken slightly.

Serve
Remove from heat and transfer the Florentine mixture to a serving dish. Serve warm as a side dish or over pasta, if desired.
