    Marinate the Pork

    In a large bowl, combine achiote paste, orange juice, lime juice, minced garlic, cumin, and salt. Mix well until the achiote paste is fully dissolved. Place the pork shoulder in the marinade, ensuring it is well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Prepare the Banana Leaves

    If using frozen banana leaves, thaw them and pass them over an open flame briefly to make them pliable. Cut them into large enough pieces to wrap the pork completely.

    Wrap the Pork

    Preheat your oven to 300°F (150°C). Place the marinated pork shoulder in the center of the banana leaves. Fold the leaves over the pork and secure with kitchen twine or toothpicks. If you have extra leaves, you can wrap them again for added moisture.

    Cook the Pork

    Place the wrapped pork in a roasting pan. Cover with aluminum foil and bake in the preheated oven for about 4 to 5 hours, or until the meat is tender and easily pulls apart.

    Serve

    Once cooked, remove the pork from the oven and let it rest for 15 minutes. Unwrap the banana leaves and shred the pork. Serve with warm tortillas, pickled red onions, and your choice of sides.
