    Preparing the Tortilla Chips

    Cut the corn tortillas into triangles or strips to create chips.

    Frying the Tortilla Chips

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the tortilla pieces in batches, frying until they are golden brown and crispy, about 2-3 minutes per batch. Remove them from the oil and place them on a paper towel-lined plate to drain. Season with salt while still hot.

    Cooking the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper. In a separate skillet over medium heat, add a small amount of oil and pour in the beaten eggs. Cook, stirring gently, until the eggs are scrambled and just set, about 4-5 minutes. Remove from heat.

    Combining Ingredients

    In a large mixing bowl, combine the fried tortilla chips, house tomato sauce, and house habanero salsa. Toss until the chips are well-coated with the sauces.

    Adding Eggs and Cheese

    Gently fold in the scrambled eggs and half of the cheddar cheese into the mixture until incorporated.

    Serving

    Transfer the chilaquiles to a serving plate and sprinkle the remaining cheddar cheese on top. Optionally, garnish with additional habanero salsa or fresh herbs as desired.
